Peanut Butter Tuna (You'll Thank Me Later)

peanut butter tuna at spring mountain livingBefore you ask if I'm kidding, let me start off by assuring you that I'm not.  You read the title correcntly. Yes, this recipe calls for peanut butter and tuna.  Together.  In the same dish.  And yes, it's actually tasty!  Don't let this unconventional recipe scare you away.  Give it a try and you'll be glad that you did. 

How did this combination fall into the same pan?  Well, by chance, mostly.  After an exhausting day, having not spent one minute considering dinner, I found myself in a rush to get a meal on the table.  Spying a few cans of tuna on the same pantry shelf as a jar of peanut butter, an idea quickly sparked.

What you'll need:

3 cans tuna in olive oil
1/4 c peanut butter
1/2 c sesame seeds
1/2 large onion
1 bunch celery
8-10 baby portabella mushrooms
2-3 cloves garlic
1/2 tsp paprika
1/2 tsp black pepper
sea salt to taste
1 1/2 c peas
1 tbsp extra virgin olive oil

  1. While olive oil heats in pan/skillet, dice mushrooms, onion & garlic.  Saute until golden brown.
  2. Add tuna, sliced celery, peas & seasonings to pan. 
  3. Add peanut butter & allow it to melt.
  4. Cover & cook, stirring occasionally.  It's ready whenever the veggies are at your preferred consistency.
So, what's it taste like?  In a word?  Delish!  If you're concerned about peanut butter taking over the dish, don't be!  My husband and boys had no idea that peanut butter was even an ingredient until I told them.  Allergic to peanut butter?  Try using our Faux Peanut Butter recipe to create your own.
